Cuantificación de Ca, Mg, K, Na y Mn en Subproductos de Cítricos procedentes de Ecuador

Resumen: Los subproductos de cítricos son fuentes importantes de nutrientes y componentes bioactivos; siendo estas características las que promueven su uso para el enriquecimiento de alimentos procesados. El objetivo de este trabajo fue cuantificar el contenido de calcio (Ca), magnesio (Mg), potasio (K), sodio (Na) y manganeso (Mn) en subproductos frescos de naranja, mandarina y limón; mediante espectrofotometría de absorción atómica. En la naranja se presentó el mayor contenido de Ca y Mg (970.83 ± 118.07 mg/100 g y 115.58 ± 15.97 mg/100 g, respectivamente), mientras que se encontró mayor concentración de K en naranja y mandarina (916.84 ± 15.90 mg/100 g y 1081.99 ± 56.50 mg/100 g, respectivamente). En el limón se evidenció el mayor contenido de Na (41.56 ± 3.80 mg/100 g) y únicamente en la naranja se encontró Mn comprendido entre 0.30 ± 0.04 mg/100 g y 0.68 ± 0.10 mg/100 g. El lugar de cultivo tuvo efecto sobre la concentración de minerales.

Abstract: Citrus by-products are important sources of nutrients and bioactive compounds that is the reason why these by-products could be used to enrich processed food. The aim of this investigation was quantify the concentration of calcium (Ca), magnesium (Mg), potassium (K), sodium (Na) and manganese (Mn) in fresh by-products of orange, mandarin and lemon; using an atomic absorption spectrophotometer. The orange showed the highest content of Ca and Mg (970.83 ± 118.07 mg/100 g and 115.58 ± 15.97 mg/100 g, respectively), while the K concentration was higher in orange and mandarin (916.84 ±15.90 mg/100 g and 1081.99 ± 56.50 mg/100 g, respectively). The lemon evidenced the highest content of Na (41.56 ± 3.80 mg/100 g) and only in the orange was founded Mn in a range between 0.30 ± 0.04 mg/100 g and 0.68 ± 0.10 mg/100 g.
